Reese's Valentine Day Cookies

If I could choose one candy to eat for the rest of my life, it would for sure be Reese's Peanut Butter Cups.  Pair that with a peanut butter cookie?  I'm yours.  I saw these last year over on I Heart Naptime and made then right away.  Well I made them again today, and they are delish. One thing the recipe doesn't mention though...wait a minute or a few before putting the peanut butter heart on the cookie.  I had quite a few hearts melt the first time I made these. 
 
 
Reese's Peanut Butter Valentine Cookies
Ingredients
  • 2 cups peanut butter
  • 1 1/2 cups white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar for rolling dough in
  • 1 package reese's peanut butter cups
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, stir peanut butter and sugar together until smooth. Beat in the eggs, then stir in the baking soda, salt, and vanilla. Place 1/2 cup sugar in a small bowl. Roll dough into 1 inch balls and then roll into sugar. Place the balls 2 inches apart onto a greased cookie sheet.
  3. Bake for 8 to 10 minutes. Place reese's peanut butter cup on top of the cookies after you remove them from the oven.

Valentine's Day Treats...

I have been back to pinning a lot now that I am on maternity leave and I have seen so many cute ideas for Valentines Day.  Because of this I thought I would bring back one of my posts from last year that seems to be getting a lot of attention on Pinterest this year.  These are all really cute and really easy ideas for your Valentine's Day party or just because.  In fact, Jack and I will be making the peanut butter hearts today, those are one of my all time favs.  So enjoy!

Some sweets for my sweets....

Although Valentine's Day may be a Hallmark holiday, I think it's the perfect time to go out of our way to show our family/friends/etc. that we love and appreciate them.  What better way to do that then to bake something for them.  These beautiful treats below would be the perfect way to say "i love you" and I am sure they all taste unbelievable.  Have a wonderful Thursday!

Red Velvet Cake Mix Brownies


So this weekend my husband and I were in the mood for something sweet.  I happened to see these Red  Velvet brownies over at Tater Tots and Jello and decided to try them.  They looked so easy and delicious and they are perfect for the upcoming Valentine's Day. 

I never made brownies using a cake mix, but these are AMAZING.  So chewy and perfectly sweet.  

Red Velvet Cake Mix Brownies Recipe

Makes one 8×8 pan of brownies
Ingredients
1 box of Duncan Hines Signature Red Velvet Cake Mix (18.25 oz)
1 cup (2 sticks) of melted butter
1 whole egg, plus two egg yolks
1 teaspoon of pure vanilla extract
1/4 cup of water
Powdered sugar for dusting
Directions
Preheat oven to 325 degrees and spray 8×8 clear glass baking pan with non stick spray. Use parchment paper to line pan so brownies can easily be removed later and cut into squares.
Combine all ingredients in the bowl of a stand mixer and mix on low just until combined.
Pour brownie batter into parchment paper lined pan and smooth top.
Bake at 325 for 35-40 minutes. Take care not to over bake.
Let brownies cool and cover, then refrigerate overnight or pop in the freezer for an hour or two.
Once brownies are chilled, remove from pan and cut into squares using a serrated knife.
Dust brownie squares with powdered sugar and try to eat just one.

Valentines Day is a little more than a month awa!!  And with all the hearts, pink and talk of love and gifts for your significant other, some of our favorite friends are forgotten about.  Our dogs.

Red Velvet Crinkle Cookies

I hope you are all having a wonderful pre-Valentine's Day weekend.  I know I am so happy to just relax. 


I had a little extra time Sunday while Jack napped, and decided to make a Valentine's Day treat.  I am not kidding you when I tell you these are so easy and so delicious that ANYONE can make them.


Your will win your loved ones over with these cookies (that is if you don't eat them all!).  They are made with Red Velvet boxed cake mix, and can be cut using a heart cookie cutter.  I like my crinkles a little more puffy, so I left them the way they are.

Red Velvet Crinkle Cookies

Yield: 2 dozen heart shaped cookies
Prep Time: 5 minutes
Cook Time: 10 minutes

ingredients:

1 box red velvet cake mix (I used Duncan Hines)
2 tablespoons all-purpose flour
2 large eggs
1/2 cup canola oil
1 teaspoon vanilla extract
Powdered sugar, for rolling the cookies
Heart shaped cookie cutter, optional

directions:

1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper  and set aside.
2. In a large bowl, combine cake mix and flour. Whisk until clumps disappear. In the bowl of a stand mixer, mix together cake mix, flour, eggs, oil and vanilla extract. Mix until smooth. Take about 1 tablespoon of cookie dough and form into a ball. Roll the ball in powdered sugar until fully coated. Place cookie dough balls on prepared baking sheet. Bake for 10 minutes, or until edges are set and cookies begin to crack.
3. Let cookies sit on baking sheet for 2 minutes. If desired, cut cookies into heart shapes, using a heart shaped cookie cutter. Transfer cookies to a wire cooling rack and cool completely.
