Key Lime Pie

This post does not need a fancy title, or fancy pictures or fancy anything really.  In fact my pictures don't look nearly as good as this dessert tastes. 

I first fell in love with Key Lime Pie my frist time visiting Key West.  I have never been a lemon or lime lover, so I was hesitant to try this dessert.  One bite and I was hooked.  I now make this in the Summer, regulary.  In fact, I make this in the Winter reguarly too.  While the picture may look pretty "blah", the taste is not....it's like a vacation in your mouth.  And like they say ....Key Lime Pie should NEVER be green.

This recipe is easier than counting to ten.  It the perfect last minute desesert and requires almost no ingredients.  I have tried many Key Lime Pie recipes, but always come back to this one.
Nellie & Joe's Recipe.  It's on the back of their Key Lime Juice bottle...and it's also listed below.  This recipe calls for a graham cracker crust, but when I'm feeling a bit crazy I make it with a strore bought Oreo Crust.  Perfection.

Nellie & Joe's Key Lime Pie
9" graham cracker pie crust (or Oreo)
14 oz can sweetened condensed milk
3 egg yolks (whites not used)
1/2 cup Nellie & Joe's Key Lime Juice

Preheat oven to 350 degrees.  Combine milk, egg yolks and lime juice.  Blend until smooth.  Pour filling into pie shell and back for 15 minutes.  Allow to stand 10 minutes before refrigerating.  Goes great topped with freshly whipped cream.

Wordless(ish) Wednesday...Starbucks Edition

One of our favorite things to do in the mornings is go to Starbucks. I have my mocha, and Jack has his water with a straw.  What I love most about it is that he thinks this logo below, is me.  Everytime we go to Starbucks he says "look...Mama!!!"  I wish....

100...and a fireman!

I will call this Summer....."The Summer of Not Posting". 

I am have been bad on the posting this summer.  Mostly because Jack and I are spending every second playing, walking, swimming, eating....and when he naps, I clean.

Summer is half way over.  I have been busy.  I feel like Summer is flying by.  But I have one little thing to make it up to you.  A giveaway.  I have reached 100.  100 followers on my Facebook page.  That makes me so so happy.  To those that "like" me, check out my giveaway over on Facebook...and if you don't, "like: me now!?

I don't know if I have mentioned this, but Jack is obsessed with Firetrucks.  When I say obsessed that is an understatement.  He talks about them NONSTOP.   I hear him in his crib at night saying hi to the firetruck, and when he is awake, he is about EVERYTHING firetruck.

98...and an apology

First of all I want to say sorry for being MIA for the past few days.  I had so much going on.  We have just been on the go everyday and I felt like I didn't even have time to breathe! (Deep Breath)  So....as of tomorrow my summer is officially half over.  Which means that I am getting sad just thinking about it. 

Over the weekend we celebrated my Grandpa's 98th birthday.  Yes 98.  It was hot out.   But Jack and the rest of us had a great time anyways.

 And I may have forgot to mention, but my one and only sister got engaged over the 4th.  This is her...and him.  I can't wait to help plan!!
 So of course we had champagne to celebrate (please ignore the awful hair and face I'm making)

I am enjoying being home this summer so much.  We have so much fun. I have also realized that being home is WAY more exhausting than working.  I am constanly on the go with Jack..we are always out and about or going for walks, swimming, etc.  I love it though.  He is learning so many things everyday!  One of the things he is learning is to smile on cue.  It doesn't always work, but he is pretty good at it.   Here are some of his smiles to brighten your day.

A hot 4th.....

It feels good to relax.  It was a VERY busy, VERY hot 4th of July weekend. I hope you all had a great weekend also. 
I thought I'd share a few pics of our weekend.  We saw fireworks.  Twice.  The first try Jack fell off his lawn chair about 5 minutes before they started.  We ended up inthe emergency room.  Ended up being a bruised, lip, but we thought it may have needed stitches. 
All that aside, we saw many of our friends and family, went to a few fests, and saw a parade.  Now back to our routine and to enjoying the rest of Summer.

Patriotic Popsicles....


Looking to cool off this holiday weekend?  These red, white and blue popsicles will do the trick! 

Beides the freezing time, these take no time to make, and are so festive for all the kids (or adults) on your list!  I used 3 ounce paper cups for these, but you can use yogurt containers or even 5 ounce cups!

With the hot weather we are having here, we will be eating these like crazy!!!!!

Patriotic Pops
Yield: 12 Popsicles
2 cups blue Gatorade (or blue drink of choice)
2 cups of lemonade
2 cups Cranberry Juice (or red drink of choice)
12 (3 oz) disposable cups
12 wooden craft sticks
Fill each of the cups 1/3 of the way with blue liquid. of the blue drink into each of the 12 disposable cups.  Freeze until partially frozen, about 30-45 minutes
Fill each cup another 1/3 of the way with the lemonade.  Add a craft stick to the center of each cup and return to the freezer for another 45 minutes.
Remove from the freezer and pour the red liquid into the rest of each cup, on top of the lemonade.  Freeze until solid.
Run briefly under warm water to remove the popsicles from the cups.

Watermelon, Feta and Basil Salad.....

You know, the older I get the more I forget.  I love this little "salad" so much that I MAY have posted this last summer.  If I did you get a repeat.  This is such a refreshing, simple dish that would be the perfect addition to any 4th of July BBQ.    The combination may sound strange, but believe me, it's the perfect match.  I like a lot of basil and feta, so I'll leave it up to you to decide how much to add.

Watermelon, Feta and Basil Salad (serves 2)

2 cups seedless watermelon, diced
 feta cheese, crumbled
basil leaves, julienned
1 tbsp balsamic vinegar
Freshly ground black pepper

Dice, crumble, julienne, drizzle, grind. Taste. Adjust.
